Grilled Parmesan Lime Chicken
Lime Chicken
1/3 Cup olive oil
1/3 Cup bottled lime juice
2 Tablespoons chopped mixed herbs, such as cilantro, chives and parsley
6 boneless skinless chicken breasts
Parmesan Lime Sauce
2 tablespoons lime juice
3 minced garlic cloves
1/2 Cup grated Parmesan cheese
1/3 Cup olive oil (Sometimes I use more)
salt and pepper
For the sauce, combine the lime juice, garlic and Parmesan cheese in a small bowl and mix well. Add the olive oil gradually, whisking constantly. Season with salt and pepper. Let stand for 30 minutes. Whisk just before serving.
This may be prepared up to one day in advance. Chill, covered, in the refrigerator. Bring to room temperature and whisk before serving.
For the chicken, combine the olive oil, lime juice, and herbs in a large sealable plastic bag. Add chicken, turning to coat well. Marinate in the refrigerator for 3-8 hours. Drain the chicken, discarding marinade. Grill or bake. Serve with the sauce and garnish with lime wedges.
