(w/ salad and tzatziki sauce)
olive oil
1/4 cup panko breadcrumbs
1/4 cup milk
1 1/4 lb ground lamb
1 t ground coriander
1 t ground cumin
1 clove garlic
1 t dried oregano
1 tb chopped fresh mint leaves
1 t salt
1/2 t freshly ground black pepper
1/4 cup feta cheese
Salad:
1 head butter lettuce, torn into pieces
1 lg tomato, diced
1 cup mixed pitted olives
1 medium Persian cucumber, thinly sliced
Tzatziki Sauce
1. Preheat oven to 400F.
2. Brush a large backing sheet with a little olive oil.
3. In a large bowl, combine the panko breadcrumbs milk and let stand for 5 minutes. Add the lamb, coriander, cumin, garlic, oregano, mint, salt, and pepper, to the soaked breadcrumbs and mix well. Gently fold in the feta cheese, then form the mixture into 1 1/2 in balls. Arrange the meat in a single layer in the prepared baking sheet. Bake in the preheated over for about 15-20 minutes, until cooked through and lightly browned.
4. While the meatballs are baking, make the salad. In a large bowl, toss together the veggie ingredients. Just before serving, add the meatballs, drizzle with the Tzatziki sauce.
