Ingredients:
2 lbs pork tenderloin
1/2 onion (maybe some green onions)
1 Tbsp white wine vinegar (maybe apple cider vinegar)
1 clove garlic
3/4 cu - 1 cu Dijon mustard
Fresh oregano, basil, and rosemary
salt and pepper
Preperation:
Mix all ingredients together (except for the pork) for a marinade. Place the marinade and the pork in a container to marinate for a few hours or overnight.
Cooking:
Pre-heat oven to 350. Place tenderloin into a baking dish and cover with the marinade. Bake for 45 minutes or until 145 degrees Fahrenheit. Let stand for 10-15 minutes and serve on a bed of rice.
