1/2 seedless cucumber, medium dice
1/2 small jicama, peeled and cut into small dice
1/2 pint cherry or grape tomatoes, halved
1/2 green pepper, small dice
1 clove garlic, minced
1/4 cup cilantro leaves, rough chopped
Sherry vinegar and extra virgin olive oil to taste
Salt and pepper to taste
1. Toss together the cucumber, jicama, tomatoes, green pepper, garlic, and cilantro
2. Dress with the sherry vinegar and olive oil to taste. Season with salt and pepper and allow the flavors to blend for 30 minutes before serving.
