Turkey black bean chili
2 tablespoons olive oil
1 large onion, chopped
1 clove garlic, minced
2# ground turkey
2 tablespoons tomato paste
2 cups chicken stock
2-15oz cans black beans
1 teaspoon dried thyme
1 tablespoon ground cumin
1 tablespoon dark chili powder
1-15 oz can diced tomatoes
2 ears fresh corn, cut off of the cob
salt, pepper and cayenne to taste
Heat the oil in a large soup pot over medium heat. Cook the onions
until translucent, about 10 minutes. Add the turkey meat and dried
seasonings. Cook, stirring frequently, until turkey is browned and
cooked through, about 10 minutes. Stir in the tomato paste, tomatoes,
black beans, and chicken stock and bring chili to a simmer. Allow the
chili to cook for about 30 minutes to let the flavors develop. Season
to taste with salt and pepper and add the corn just as you are taking
it off the heat.
